EXTRAVIRGIN OLIVE OIL - MONOCULTIVAR

Technical Profile

The variety of olives called “Ottobratica” is exclusive to the province of Reggio Calabria; the presence of this variety of olives is wide-spread thoughout the plain of Gioia Tauro and in the hill and pre-hill territory that surrounds the plain.

The “Ottobratica” variety is so called because its ideal point of maturation culminates in the month of October. The picking period for this olive is that of the ripening of the drupe, that is at the beginning of maturation of the fruit.

In a study published by the well Known magazine “Rivista Italiana delle Sostanze Grasse” July/August 2000, researchers from the faculty of Agriculture at the University of Reggio Calabria state that oil obtained from the “Ottobratica” variety presents compositive peculiarities of great relevance that allow an appreciable long term conservation.

Of course, for this to occur, it is indispensible to respect the innovative criteria of the picking the olives (eg. use of mechanical means), the period of picking (initial state of maturation), the techniques for its transformation (hygiene and the attention given to the olives and bottling).

Of relevance in the study made is the datum that refers to the mean value of polifenols and tocoferols (antioxidants) contained in the oil obtained from the “Ottobratica” variety, that constitute a considerable component of vitamin intake (vitamin E antioxidants) indispensable in our daily alimentation.

Organoleptic Profile

< Colour: veiled yellow gold.

< Fragrance: delicately fruity, vigourous and persistent

with notes of fresh herbs, with a scent of wild cardoon, mature golden apple and delicate tones of underwood.

< Taste: well balanced with light bitter and more pronounced

hot spicy tones. It closes with scents of field grass, green vegetable and small red fruits; harmonious and elegant, delicate in the tones of dry and mature fruit with a a herby base. It has a balanced bitter and spicy content closing with

a sweet almond aftertaste.

< Aspect: veiled.

< Use: raw on all food.
